Dinner is served... well sometimes!



It never fails if I need a dessert its made before you can finish asking for it but... dinner now that a whole other issue. My poor kids (including my husband who I consider my 3rd child ;P ) can only eat so much chicken and box noodles. So occasionally I feel the itch to make something yummy so I thought I would share my latest creation via pictures only, as I have been asked by my sweet mother not to reveal all the ingredients as she thinks I might have stumbled on to a magnificent creation and since she is definitely a self taught chef who should own her own bistro, I listened (I know a shocker!!!) so... Enjoy (the pictures anyway)!

Carrot muffin anyone?


I'm not a huge fan of carrot cake, so when I found myself with a 5 lbs bag of Costco carrots that were going to go bad before I had a chance to use them I decided to Google to find some alternative suggestions to rid me of my bulk shopping gone wrong and ironically these are not far from there counterpart but they have found a place in my recipe book... other than needing way more cinnamon, btw I freaking love cinnamon, these were a nice breakfast for me as I ran out the door to work, as I am habitually running late for work, it did call for a cream cheese frosting as well but I wasn't shooting for dessert so much as a semi healthy(? lol) way to use my carrots in a rush! Enjoy!

The enfamous brownie or in this case... Blondie!


It never fails, every time I make blondies (brownies too) I over mix! So help me I am an obsessive mixer... I never know when to stop, I keep going til it's light and fluffy! Have you ever had a "light and fluffy" blondie?! No I think not! I will one day learn to stop when the ingredients are just mixed and maybe I should just try mixing them by hand too!! But I love my high powered mixer that never tires... so for now... here is some over mixed blondies and some southern no bake cookies (more like a bar to me) with coconuts, almonds, a sweet filling, with some yummy frosting on top and don't forget the graham crackers that sandwich it all together in this tooth aching sweet treat! Enjoy!
